&lt;p&gt;&lt;span&gt;This is not your typical burger stop.&lt;/span&gt;&lt;span&gt;  Prime and grass-fed beef, salmon, shrimp, turkey, veggie, unusual sauces, fried egg &lt;/span&gt;&lt;span&gt;and &lt;/span&gt;&lt;span&gt;foie gras toppings &lt;/span&gt;&lt;span&gt;are among the myriad of choices offered, plus they have excellent (and non-greasy&lt;/span&gt;&lt;span&gt;) &lt;/span&gt;&lt;span&gt;F&lt;/span&gt;&lt;span&gt;rench fries.  I&amp;#8217;ve had three&lt;/span&gt;&lt;span&gt; styles &lt;/span&gt;&lt;span&gt;(so far&amp;#8230;)&lt;/span&gt;&lt;span&gt;, though my favorite is &lt;/span&gt;&lt;span&gt;the&lt;/span&gt;&lt;span&gt; shrimp burger&lt;/span&gt;&lt;span&gt;! More&lt;/span&gt;&lt;span&gt; perks &amp;#8212; the prices are reasonable and they offer a kid&amp;#8217;s size for just  $4 (a light lunch for &amp;#8220;big kids&amp;#8221;?).  Beyond the food, it is also &lt;/span&gt;&lt;span&gt;the cutest shop ever&lt;/span&gt;&lt;span&gt; - you &lt;/span&gt;&lt;span&gt;can&amp;#8217;t &lt;em&gt;imagine&lt;/em&gt; what they did with that narrow 100+ year&lt;/span&gt;&lt;span&gt;-&lt;/span&gt;&lt;span&gt;old space.&lt;/span&gt;&lt;span&gt; Needless to say, we highly recommend that you make a visit. &lt;/span&gt;&lt;span&gt; &lt;/span&gt;&lt;/p&gt;

&lt;p&gt;Ever since we started carrying &lt;a title="Justin Rothshank's" target="_blank" href="http://www.rothshank.com/"&gt;Justin Rothshank&amp;#8217;s&lt;/a&gt; wonderfully original pottery and tableware at &lt;a title="Tabula Tua" target="_blank" href="http://www.tabulatua.com"&gt;Tabula Tua&lt;/a&gt;, I have been intrigued by the juxtaposition of the artist&amp;#8217;s youthful and unique style with his home in the heart of Midwestern Amish country. After hearing a recent &lt;a title="NPR" target="_blank" href="http://www.npr.org"&gt;NPR&lt;/a&gt; story about &lt;a title="The Electric Brew" target="_blank" href="http://theelectricbrew.com/"&gt;The Electric Brew&lt;/a&gt; in Goshen, Indiana, I was inspired to take advantage of the incredible October weather, and two Saturdays ago two friends and I made a visit.  The drive from Chicago was only 2.5 hours, but we could have been a million miles away.  &lt;/p&gt;

&lt;p&gt;We rolled into the sleepy town and headed to the &lt;a title="Goshen Farmer's Market" target="_blank" href="http://www.facebook.com/pages/Goshen-Farmers-Market/139366208479"&gt;Goshen Farmer&amp;#8217;s Market&lt;/a&gt;, which sells all things local, from free-range meats and dairy to quilts and jewelry. We then checked into the &lt;a title="Rose Lane Farm" target="_blank" href="http://www.roselanefarmbedandbreakfast.com/"&gt;Rose Lane Farm&lt;/a&gt; Bed &amp;amp; Breakfast, which is owned by Stephen and Rosetta Schmidt and sits on six acres of gorgeous farm- and wood-land about 15 minutes from downtown Goshen. We had a relaxing picnic of bread, cheese, and tomato salad from the farmer&amp;#8217;s market, and then took a stroll around the property, crossing paths with the chickens that would be responsible for Sunday&amp;#8217;s breakfast eggs. After eating we went back into Goshen to visit the &lt;a title="Old Bag Factory" target="_blank" href="http://oldbagfactory.com/"&gt;Old Bag Factory&lt;/a&gt;. Once a Midwestern industrial centerpiece, the factory has been transformed into an artist hub, with sculptors and craftsmen using the space as a public workshop, while also having the opportunity to sell their goods. Our final destination on Saturday was The Electric Brew, where we joined a crowd of &lt;em&gt;all&lt;/em&gt; ages listening to singer/songwriters Caralie Raymond and Dave Johnson - I particularly enjoyed the latter performer, who sounded a bit like Neil Young.&lt;/p&gt;

&lt;p&gt;Sunday we awoke to the clip-clop of horses leading carriages of Amish and Mennonite folks to church. We enjoyed a breakfast made with ingredients directly from the farm, and returned to town where we visited one of the only places open on Sunday morning, the &lt;a title="Olympia Candy Kitchen" target="_blank" href="http://olympiacandykitchen.com/"&gt;Olympia Candy Kitchen&lt;/a&gt;. Another &amp;#8220;throwback&amp;#8221; to a different era, they make hand-dipped chocolates and have a diner in the front where hard-working teens serve eggs and coffee (and a delicious homemade fruit lemonade that I had with apples and oranges). We finished the trip with a visit to &lt;a target="_blank" href="http://www.kerchersorchard.com/"&gt;Kercher&amp;#8217;s Sunrise Orchard&lt;/a&gt;, where we picked perfectly ripe apples to bring back to Chicago.&lt;/p&gt;

&lt;p&gt;&lt;em&gt;DELICIOUS homemade fruit lemonade!&lt;/em&gt;&lt;/p&gt;
&lt;p&gt;As I arrived back home, I was struck by how I have consciously moved in the direction of eating more locally-produced foods and supporting local artisans, and yet I had no idea that such an idyllic notion of &amp;#8220;local&amp;#8221; really even existed. But it certainly does, and it&amp;#8217;s not very far, at all, from our doorsteps.  &lt;/p&gt;

&lt;p class="MsoNormal"&gt;12 oz. chorizo&lt;/p&gt;
&lt;p class="MsoNormal"&gt;1 rotisserie chicken&lt;/p&gt;
&lt;p class="MsoNormal"&gt;1 red onion, chopped&lt;/p&gt;
&lt;p class="MsoNormal"&gt;1&amp;#160;1/2 c. sour cream&lt;/p&gt;
&lt;p class="MsoNormal"&gt;2 Serrano peppers, chopped&lt;/p&gt;
&lt;p class="MsoNormal"&gt;2 + 2 c. shredded Colby jack cheese&lt;/p&gt;
&lt;p class="MsoNormal"&gt;1/2 tsp. nutmeg&lt;/p&gt;
&lt;p class="MsoNormal"&gt;3 tsp. cumin&lt;/p&gt;
&lt;p class="MsoNormal"&gt;1/4 tsp. cayenne&lt;/p&gt;
&lt;p class="MsoNormal"&gt;1/4 tsp. black pepper&lt;/p&gt;
&lt;p class="MsoNormal"&gt;16 oz. refried beans&lt;/p&gt;
&lt;p class="MsoNormal"&gt;16 oz. black beans, rinsed and drained&lt;/p&gt;
&lt;p class="MsoNormal"&gt;1 c. assorted bell peppers, sliced&lt;/p&gt;
&lt;p class="MsoNormal"&gt;1 c. corn, thawed if frozen&lt;/p&gt;
&lt;p class="MsoNormal"&gt;1 bunch fresh cilantro, chopped&lt;/p&gt;
&lt;p class="MsoNormal"&gt;2&amp;#160;T olive oil&lt;/p&gt;
&lt;p class="MsoNormal"&gt;Flour tortillas&lt;/p&gt;
&lt;p class="MsoNormal"&gt;Tortilla chip strips&lt;/p&gt;
&lt;p class="MsoNormal"&gt;Preheat oven to 375 degrees.&lt;/p&gt;
&lt;p class="MsoNormal"&gt;In a skillet, saute chorizo over medium heat until it becomes slightly darker in color and it renders some of its fat (approximately 5 minutes).  Set aside.&lt;/p&gt;
&lt;p class="MsoNormal"&gt;In a large mixing bowl, add sour cream, red onion, refried beans, chopped Serrano peppers, 2 cups of the cheese, and spices.  Mix well.  Then incorporate shredded rotisserie chicken, chorizo, black beans, corn, sliced bell peppers and chopped cilantro.  Mix well.&lt;/p&gt;
&lt;p class="MsoNormal"&gt;In a 9&amp;#8221; x13&amp;#8221; casserole dish, lightly coat the bottom and sides with olive oil.  Then add a layer of tortilla shells (you can trim the circular edges to resemble rectangular sheets or keep it rustic by folding the round edges up the oiled sides of the baking dish).  This will allow the tortilla shells to become crisp and provide a firm base when serving the casserole.  Add 1/3 of the mixture.  Follow by adding a second layer or tortilla shells and another 1/3 of the mixture. Repeat and finish with a final layer of tortilla shells along the top.  Spread the remaining 2 cups of shredded cheese over the top of the casserole.&lt;/p&gt;
&lt;p class="MsoNormal"&gt;Bake for 40-45 minutes or until casserole is bubbling and cheese is melted.  Allow to rest for 10 minutes before serving.  Garnish on top with tortilla chip strips and let the fiesta begin!&lt;/p&gt;
&lt;p class="MsoNormal"&gt;While this casserole needs no partner to dance the Flamenco, I love Latin dishes to have a variety of sides to add color and flavor to compliment the lusciousness of this casserole.  So, I would recommend serving the Flamenco casserole with a side of white rice tossed with cilantro, shredded romaine lettuce, or homemade guacamole.&lt;/p&gt;
